Fixture FIXTURE RECORD — written for this repository to demonstrate the Library content contract. It is not researched, not sourced, not kitchen-tested, and not publication-ready. Nothing here asserts the history, authenticity, or regional ownership of any dish.

West Asia fixture

Griddle Flatbread

Fixture A

A plain flour-and-water dough rested briefly, rolled thin, and cooked dry on a hot griddle. Used here as the simplest possible worked example of a record with two regional variants.

Regional variants

Variants are held side by side. The record does not nominate one of them as the definitive version.

  • Thin, dry-griddled

    West Asia

Rolled to roughly 2 mm and cooked on a dry surface, so the bread stays flexible and pale with scattered blisters.

  • Thicker, fat-brushed

    South Asia

Rolled to roughly 5 mm and brushed with fat during cooking, giving a softer crumb and a browner surface. Recorded as a parallel variant rather than a correction of the first.

Ingredients

  • 250 g Plain wheat flourPlus a little extra for dusting.
  • 150 ml Warm waterAdded gradually; flours vary in how much they take.
  • 1 tsp Salt
  • as needed Neutral oil or melted butterOnly for the thick, fat-brushed variant.

Yield: Six breads.

Method

  1. Mix the flour and salt, then add the warm water a little at a time until a shaggy dough forms.
  2. Knead on a lightly floured surface until the dough is smooth and no longer sticky, roughly 6 to 8 minutes.
  3. Cover and rest for 20 to 30 minutes so the dough relaxes and rolls out without springing back.
  4. Divide into six pieces. Roll each to the thickness called for by the variant you are following.
  5. Heat a heavy pan or griddle over medium-high heat until a drop of water skitters across it.
  6. Cook each bread until it puffs and shows coloured spots, roughly 1 to 2 minutes per side, brushing with fat only if you are following the thick variant.
  7. Stack the cooked breads under a cloth so trapped steam keeps them soft while you finish the rest.

Safety caveats

  • A griddle hot enough to cook flatbread will burn skin on contact; handle the pan with a dry cloth or mitt.
  • This record has had no food-safety review. Treat it as an interface fixture, not as kitchen guidance.
